Whatever you pick for that customer, independent of the language you're working in. Customer documents default to English; set a client to Spanish once on their profile, or switch a single quote or invoice right on the send sheet. The job templates and the document's own wording switch language — your custom lines print exactly as you typed them. Anything missing from a translation falls back to English, never a blank.

Yes — your client list and your price book both. Export them as CSV from your old app, then open Settings → Import & Export → Import from Another App in QuoteIron (the Book and Clients tabs show the same button while they're empty) and choose the file. QuoteIron reads your column names, figures out whether it's clients or a price book, and shows you the first rows before it adds anything — if it guessed a column wrong you re-point it yourself, and one tap undoes the whole import. Clients come in with name, phone, email, address and notes. Price-book jobs come in at the prices you were already charging. Job, quote and invoice history doesn't come across — that data is shaped differently in every app, and we'd rather say so than half-do it.

Any app that exports a CSV with a row of column names, because you can always point QuoteIron's fields at your columns by hand before a single record is imported.
